Tash & Hera's Entree, Paua


2tsp yeast

1 cup sugar

1 cup flour

1 onion

250ml cream

10 paua

500g sundried tomatoes

12 lemons

1tsp olive oil

2 cloves garlic

1/4 cup vinegar

2tbs palm sugar

1 punnet micro herbs

1 bag rocket

Salt & pepper


1. Set yeast for bread.

2. Combine wet and dry ingredients and rest dough before baking.

3. Tenderise paua by boiling.

4. Add oil, butter and onions, then fry along with paua and cream.

5. Stuff creamy paua mixture into dough.

6. Prepare raw paua slithers in marinade. 

7. Plate and garnish.
