Tash & Hera - Lamb Rack
on Smoky Kumara Puree with Spiced Dukkah
(Quantities according to flavour preferences and number of guests)
1. Prepare lamb racks with seasoning.
2. Sear in the pan before baking in the oven.
3. Prepare dukkah mix by roasting and blitzing ingredients.
4. Prepapre kumara by boiling first, then smoking with manuka chips.
5. Combine all relish ingredients and cook in pan. Thicken with vinegar and flour.
6. Mash smoked kumara with then puree with cream, butter and parsley.
