with Apple and Fennel Slaw

Henry and Anna's Pork Burger

Toasted burger buns, to serve

Pork Patties

600g pork mince

1 onion, finely chopped

2 garlic cloves, crushed

1 cup basil leaves, finely chopped 

1 cup flat-leaf parsley, finely chopped

60g (½ cup) shredded cheddar

2 tsp wholegrain mustard

1 pinch of ground white pepper

40g (½ cup) fresh breadcrumbs

1 egg, lightly beaten

Apple & Fennel Slaw

1 baby fennel, shredded

1 green apple, cut into julienne

1 cup shredded white cabbage

2 tsp white wine vinegar

1 lemon, zested, juiced

Caramelised Onion Relish

2 tbs olive oil

4 red onions, thinly sliced

2 tbs brown sugar

2 tbs balsamic vinegar

1 tsp wholegrain mustard


2 egg yolks

2 tbs lemon juice

2 tsp Dijon mustard

250ml (1 cup) light olive oil

2 garlic cloves, crushed


1. To make patties, place all ingredients in a large bowl. Using your hands, massage to combine. Shape into six patties and place on an oven tray. Cover and refrigerate for 30 minutes or overnight. 

2. To make slaw, combine all ingredients in a bowl. Season. Refrigerate for 30 minutes. 

3. Meanwhile, to make caramelised onion relish, heat oil in a large frying pan over medium heat. Add onion and cook, stirring occasionally, for 10-15 minutes or until very soft. Stir in sugar and vinegar. Reduce heat to low and cook, stirring occasionally, for a further 15-20 minutes or until very soft, sticky and caramelised. Remove pan from heat and stir in mustard.

4. To make aioli, process egg yolks, lemon juice and mustard in a food processor until well combined. With the motor running, gradually add oil, drop by drop at first, then in a thin, steady stream until thick and emulsified. Stir in garlic. Season and refrigerate until needed.

5. Preheat a barbecue grill plate over medium heat. Add burgers and cook, turning, for 4-5 minutes or until browned all over and cooked through. 

6. Drain slaw.

7. Spread buns with aioli, then sandwich with patties, coleslaw and relish. Serve.
