Henry and Anna's Blue Cheese Stuffed Dates

12 large dates, halved lengthways, stone removed

150g blue cheese, cut into 12 portions

6 slices prosciutto, halved lengthways

Toasted flaked almonds, to serve


1 cup baby kale 

1 tbs dried cranberries, chopped

1 tbs lemon juice

2 tsp olive oil


1. To make salad, place all ingredients in a bowl and toss to combine. Season. 

2. Push 1 portion of cheese into the centre of 1 date. Repeat with remaining cheese and dates. Wrap each date with 1 prosciutto slice.

3. Preheat a frying pan over medium heat. Add dates and cook, turning, until browned all over and dates are heated through.

4. Place stuffed dates on a serving platter and garnish with nuts. Serve with salad to the side.
