Dan and Gemma's Beer Battered Onion Rings

2 large onions, thickly sliced

Seasoned plain flour, to dust

Sweet paprika, to dust


250g self-raising flour

250ml (1 cup) lager 


1. To make batter, whisk flour and lager with 250ml (1 cup) ice cold water in a bowl. 

2. Fill a deep-fryer or large saucepan one-third full with vegetable oil and heat over medium heat to 180C (or until a cube of bread turns golden in 10 seconds). Working in batches, dust onion rings with flour, then dip into batter and allow excess batter to drain off, then gently drop into the oil and fry, turning halfway, for 4-6 minutes or until crisp and golden. Remove with a slotted spoon and drain on paper towel.

3. Season with salt and paprika to serve.
